Start with the recipe’s unit
Use the author’s cup or spoon standard when it is given. US customary, US labeling, metric, Imperial, Japanese cooking and Japanese rice measures have different capacities. A rice cooker cup normally differs from a Japanese kitchen cup.
Match the tool to the job
Fluid ounces measure volume. A scale reading belongs in the Weight directory. To estimate the weight of a food from a volume, choose the food and its documented portion.
For a different batch size, use the recipe scaler before converting the units. For a printed reference, see the kitchen charts.
