Keep fluid ounces separate

A weight ounce belongs with grams, pounds and kilograms. A fluid ounce belongs with cups and milliliters. If a jar label gives ounces by weight, convert the stated mass directly. If a bottle gives fluid ounces, choose a volume conversion. Read the weight and volume guide for the difference.

When the recipe uses a cup

Two foods can fill the same cup and register different weights. Even the same food can vary with how it is packed. The ingredient tool scales an identified source portion only for listed foods. If you cannot match the food and preparation, use the recipe author’s stated weight or weigh your measured portion.

To weigh a portion, set an empty bowl on the scale and zero the reading before adding the food. Use a precision that your scale can actually show.

Avoirdupois and troy ounces

Kitchen scales use the avoirdupois ounce for ordinary weight. One international avoirdupois pound is exactly 453.59237 grams. Troy ounces are used for precious metals. Check the unit before reusing a measurement from a different scale.
